Chocolate Chip Pumpkin Energy Bites
A healthy, quick and easy snack that will keep you full and satisfied and your little ones thinking it's a nice treat. Simple whole food snacks.

- 1 cup of pecans
- 1 cup of dates
- 2 tsp pumpkin pie spice
- 2 tbsp organic pumpkin puree
- 1 cup rolled oats gluten-free
- 1 tbsp ground flax seeds
- 1/4 cup vegan mini chocolate chips if not vegan, then chocolate chip of choice
In a food processor, add all the ingredients EXCEPT the chocolate chips.
Blend until you see it start to form into a sticky ball (1-2 minutes)
Once blended and sticky, add chocolate chips and mix with a spatula
Using a mini scooper, roll each mix into mini balls and store in a glass container
You can also store in the freezer to make them last a while.
