Lemon Turmeric Chicken Noodle Soup

Ingredients
  

  • 1 yellow onion minced
  • 2 tbsp avocado oil
  • 2 garlic cloves minced
  • 1 cooked rotisserie chicken shredded
  • 3 celery sticks sliced
  • 3 carrot sticks peeled and sliced
  • 1- inch ginger peeled and grated
  • 1/2 inch turmeric peeled and grated
  • 2 zucchini diced
  • 8 cups bone broth or chicken broth
  • 1/2 box of Capellini gluten-free pasta jovial brand
  • 1 lemon zested
  • 1 ½ lemons juices
  • 1/4 cup parsley minced
  • Salt and pepper to taste

Instructions
 

  • In a large pot set to medium/low heat, add the avocado oil, onions, carrots, and celery. Season with salt and pepper. Cook for about 5 minutes.
  • Next, add the garlic, ginger, and turmeric and cook for 1 minute.
  • Add the broth, chicken, 1/2 the box of pasta (break it in half), zucchini, salt, and pepper, and cook covered for about 12-15 minutes or until the noodles are cooked through.
  • Once the noodles are cooked, add the lemon zest and juice, more salt and pepper, and parsley. Cook for another 2 minutes.
  • Serve and enjoy!
