Buffalo Chickpea Pizza With Herby Ranch

Pizza Pizza! This delicious Buffalo Chickpea Pizza With Herby Ranch is quick, simple, and packed with flavor. Crispy chickpeas smothered in a buffalo sauce and topped with a vegan ranch.

Ingredients
  

  • 1 can chickpeas drained and rinsed
  • 1/3 cup vegan cheese
  • 1/3 cup marinera sauce
  • 2 tsp hot sauce
  • 3 tbsp red onions diced small
  • 1 celery stick diced small
  • 1/4 cup kale chopped
  • 1/3 cup mild buffalo sauce
  • gluten-free and and vegan pizza crust
  • 2 tbsp olive oil
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 400°
  • In a small bowl, add the marinara sauce and hot sauce and mix.
  • On a baking dish lined with parchment paper, add the chickpeas, 2 tbsp olive oil, salt, and pepper.
  • Roast the chickpeas for about 15 minutes. The chickpeas should be almost crispy but not quite.
  • Remove from the oven and toss with the buffalo sauce (reseerving a few tbsp of the sauce).
  • Assmeble the pizza starting with the marinara sauce, cheese, kale, red onions, and buffalo chickpeas. Roast for about 12 minutes or whatever your pizza crust requires.
  • Remove from the oven, add the diced celery, and the herby ranch (recipe linked in the blog post).
  • Slice and enjoy!
