I made this salad on a whim the other night and it was a HUGE hit with my kids and hubby. It’s made with seasonal ingredients and paired with some fresh tasty dill and lemon vinegarette. It’s so easy and fast to make for any weeknight meal, side salad, or holiday dinner.
If you haven’t tried persimmons it’s absolutely delicious. It’s sweet and tarty all combined and has this beautiful deep orange color that pops in a dish. Eat the skin and enjoy this seasonal fruit.
Persimmons are rich in vitamins, minerals, and antioxidants. They are also high in soluble dietary fiber, which slows the digestion of carbohydrates, preventing spikes in blood sugar. You know I’m a fan of that LOL.

- butter lettuce or any lettuce

Winter Persimmon Salad
Ingredients
- 5 ounce box of little gem or butter lettuce
- 1 persimmon sliced
- 1/4 cup pomegranete seeds
- 1/4 cup raw pumpkin seeds
- 2 tbsp fresh dill
- DRESSING
- 1/4 cup olive oil
- 1 tsp dijon mustard
- 1/2 lemon juiced
- salt and pepper to taste
Instructions
- In a small bowl, whisk together the lemon juice, dijon, salt, pepper. Then, slowly add in the olive oil while whisking and set aside.
- In a salad bowl or platter, add the lettuce, and remaining salad ingredients. Dress the salad and enjoy.
- *Only dress the salad with dressing once you are ready to serve. the salad can be made early morning and dressed before dinner.
