Soup season is my favorite season because not only do I enjoy a cup of soup when it’s cold outside, but I can enjoy soup in the summertime. This soup is so hearty and cozy and trusts me, you won’t even know there’s cauliflower in it. Puree all the ingredients together for that silky and creamy finish.

Here’s What You Need

  • cauliflower
  • onions
  • white beans, I like cannellini beans
  • thyme
  • sage
  • vegetable broth
  • salt and pepper
  • gluten-free sourdough, I ordered mine from Breadlok
  • olive oil
  • garlic
  • onion powder

Ingredients
  

  • 4 tbsp olive oil divided
  • 1 yellow onion minced
  • 2 garlic cloves minced
  • 1 head of cauliflower chopped
  • 1 can cannellini beans drained and rinsed
  • 2 tsp fresh or dried thyme
  • 2 tsp fresh or ground sage
  • 4 cups vegetable broth
  • salt and pepper to taste
  • 3 slices of gluten-free sourdough bread or regular bread cubed
  • 1 tsp italian seasoning
  • 1 tsp onion powder

Instructions
 

  • Preheat oven to 400°
  • On a small baking sheet, add the bread and 2 tbsp of olive oil, onion powder, dash of salt, and Italian seasoning. Toss and bake for about 8-10 minutes.
  • In a large pot, add the remaining olive oil, onions, garlic, salt, and pepper cook for about 5 minutes.
  • Add in the thyme and sage and cook for about 1 minute.
  • Add in the cauliflower, beans, broth, salt, and pepper. Cover and cook for about 20-25 minutes.
  • Once the cauliflower is fork-tender, using an immersive blender or regular blender would work, belnd the ingredients together until is smooth, silky, and creamy.
  • Top with croutons and fresh cracked pepper and enjoy.
