Ingredients
  

  • 1 bunch of watercress washed and dried
  • 1 cutie or mandarin peeled
  • 1/2 Persian cucumber sliced
  • 1 radish sliced
  • 1 small watermelon radish chopped
  • 1/4 cup chopped raw almonds
  • 1/2 cup snow peas
  • 2 tbsp microgreens
  • 1/4 cup Primal Kitchen sesame ginger dressing
  • 1/4 cup navy beans drained and rinsed (optional

Instructions
 

  • Heat a small saucepan with boiling water. Add the snow peas and boil for about 2-3 minutes. Remove and place them directly in a small bowl of cold ice water.
  • Meanwhile, on a large plate, add the watercress, radishes, watermelon radishes, almonds, cucumbers, mandarins, snow peas, and microgreens. You can add 1/4 cup of canned beans for extra protein if needed. Totally optional.
  • Add the dressing.
  • Toss and enjoy.
