Weekends are for pancakes! Who’s with me?! These are the ultimate fluffiest pancakes that are not only tasty but packed with fiber but a ton of vitamins and iron. You’ll be making these again and again.
I used oat flour but if you can’t find oat flour, no problem. Buy rolled oats (I love and trust THIS brand One Degree Rolled Oats only due to the glyphosate issue). Add the rolled oats in a blender or food processor and blend until it turns into a fine course flour. So easy to just make your own which is so nice.
You’ll find ground flaxseeds in here which is packed with a ton of fiber that can improve your digestive health system, promote regular bowel movements, and regulate sugar. They also contain Omega 3 and protein which will keep full longer.
Hemp Seeds are amazing and something I love to add in baked goods, salads, and smoothies for extra nutrients. They are rich in healthy fats, essential fatty acids, and a great protein source. They also contain high amounts of vitamin E, phosphorus, potassium, sodium, magnesium, sulfur, calcium, iron, and zinc.

Vegan Chai Spice Pancakes
Ingredients
- 2 cups oat flour
- 2 cups almond milk
- 1 1 /4 tbsp baking powder
- 4 tbsp coconut oil
- 3 tbsp maple syrup
- 2 tbsp ground flaxseeds
- 2 tbsp of hemp seeds
- 1 tbsp vanilla extract
- 1/2 tsp clove
- 1/4 tsp cardamom
- 1/2 tsp ginger
- 2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- Toppings: sliced bananas toasted walnuts, maple syrup, almond butter
Instructions
- Heat a pan or griddle.
- In a bowl mix all the ingredients together. Using 1/4 cup measuring cup, pour the batter and cook a few minutes pers ide. Top with sliced bananas, walnuts, and syrup, and enjoy!
