- shredded rotisserie chicken
- mayo
- dijon mustard
- celery
- corn
- avocado
- red onion
- tarragon
- basil
- salt and pepper

Summer Corn and Avocado Chicken Salad
Ingredients
- 4 cups cooked chicken loosely shredded I use rotisserie chicken
- 1/2 cup finely diced celery
- 1/2 cup finely diced red onion
- 1/2 cup fresh or defrosted corn
- 1/2 avocado diced
- 2 tbsp finely chopped fresh tarragon leaves
- 1 tbsp fresh chopped basil
- 4 tbsp homemade mayo
- 1 tsp dijon mustard
- kosher salt to taste
- black pepper to taste
Instructions
- In a large bowl, combine all the ingredients EXCEPT the avocado and mix well. Add the avocado a gently toss.
- Serve over arugula salad or with crackers.
