This delicious Sheet Pan Kofta with Potatoes is the easiest weeknight meal. It’s completely gluten-free, dairy-free, grain-free, and Paleo. Perfect for the whole family!
Kofta is a traditional Armenian recipe I grew up eating and loving. It’s basically ground beef filled with so many amazing flavors and resembles a hamburger patty. I remember my mom making it a lot on weeknights because we were so busy with sports, that it was the perfect quick and healthy sheet pan dish for those busy on-the-go days.
So, let’s chat about the ingredients and what’s inside. If you haven’t had Kofta, it’s basically an oval-shaped piece of burger meat filled with traditional Mediterranean flavors and grilled on skewers. I’m telling you guys, it’s so flavorful. If you wanted to, you can simply form these into burger patties and enjoy them as a burger. Traditionally, you won’t find onion soup mix on the ingredient but it sure is life-changing.
We traditionally serve this with potatoes. You cut up some russet potatoes into thin wedges and mix in a little olive oil and some of the onion soup mix. Then lay them on a baking sheet in single layers making sure they don’t overlap. Add the formed meat patties right on top, then pour some of the vegetable juice all over. Bake it and enjoy. Yes, it’s that simple!
I like to serve this dish with some greens because that’s the only thing missing. Lol… I love to make my Armenian salad for something light and refreshing, or roast or steam up some green beans or any other veggie you prefer.

Sheet Pan Kofta with Potatoes
Ingredients
- 1.5 lb ground beef
- 2-3 russet potatoes cut into wedges
- 1 package of onion soup mix I like the gluten-free brand from Whole Foods
- 1 egg
- 1.5 cup vegetable juice no sugar added, or use tomato sauce or V8 juice
- 1/4 cup parsley minced
- 1 onion grated
- 2 cloves of garlic minced
- 2 tbsp ketchup Whole30 preferred
- salt and pepper to taste
- 2-3 tbsp olive oil
Instructions
- Preheat oven to 375°
- In a large bowl, add the wedged potatoes, olive oil, 1/2 of the packet of onion soup mix, salt, and pepper to taste. Mix and lay them sideways on a large baking sheet lined with parchment paper. Do not overlap.
- In the same bowl, add the ground beef, grated onion, egg, garlic, parsley, ketchup, remaining onion soup mix, salt, and pepper to taste. Mix well with hands making sure not to over mix.
- Form equal size patties using a 1/4 cup measurement. Form into ovals and lay them on top of the potatoes.
- Pour the vegetable juice on top of it all and bake for about 30 minutes.
- Serve and enjoy!
- **Note: If the potatoes are cut thick, bake them first for about 10 minutes or so and then add the meat and sauce on top after. You don't want the beef to cook before the potatoes.
