I have always been in love with tomatoes. But my absolute favorite way to serve them up lately is by roasting them. It just changes the flavor entirely giving it this delicious juicy and sweet flavor. Plus, what’s amazing is you throw it all on a baking sheet and bake leaving you with very little clean-up.
I like to start by slicing the tomatoes almost all the way through. Then, douse it in olive oil and sprinkle on some salt and pepper for flavor. For that extra flavor, you get with each bite… slice two garlic cloves and add it right on top. For some freshness, add that thyme baby! Once it’s done cooking, top it with flaky sea salt.
So simple and so easy. It’s great for making as a side dish, serving it for a brunch party, or just great for entertaining guests because it can be served warm or at room temperature. You can also blend the entire thing for a simple and delicious tomato soup.

Roasted Garlic and Thyme Tomatoes
Equipment
- baking sheet
Ingredients
- 8-10 roma tomatoes
- 2 tbsp olive oil
- 2 garlic cloves sliced thin
- 1 tbsp fresh thyme leaves
- 1 tbsp fresh oregano leaves rough chopped
- 1 tsp fresh sliced basil
- salt and pepper to taste
- flaky sea salt optional
Instructions
- Preheat oven to 450
- Slice the tomatoes lengthwise without cutting all the way through.
- On a baking sheet lined with parchment paper, add the tomatoes and the remaining ingredients EXCEPT for the flaky sea salt. Roast for about 30-35 minutes.
- Remove from the oven and top with flaky sea salt and extra herbs, and enjoy!
