Roasted Butternut Squash with Lemon Tahini Dressing
Ingredients
- BUTTERNUT SQUASH
- 1 small/medium butternut squash peeled and diced
- 2 tbsp olive oil
- 1 tbsp za’atar seasoning
- salt and pepper to taste
- 1 tbsp toasted pine nuts
- 1 tbsp chopped cilantro
- 1 tsp sumac seasoning
- LEMON TAHINI SAUCE
- 3/4 cup tahini
- 2 tbsp olive oil
- 1 garlic clove
- 1 lemon juiced
- 1/4 cup filtered water
- salt and pepper to taste
Instructions
- Preheat oven to 400°
- On a baking dish, add the butternut squash, olive oil, za’atar seasining, salt, and pepper. Toss and bake for about 25 minutes.
- Meanwhile, add all the lemon tahini ingredients into a small food processor and puree. If the dressing is too thick, add a little more water at a time until it’s at a desired consistency.
- Add the cooked butternut sqaush to a small platter. Pour the tahini dressing on top, add the pine nuts, cilantro, and sumac.
- Serve and enjoy.
- Note: if pomegranetes are in season, add a little on top for garnish, flavor, and holiday spirit.
