Who doesn’t like pizza or lasagna? This recipe combines two common favorites that I know your family and kiddos are going to love.
This recipe is gluten-free and I did use vegan ricotta and regular shredded organic mozzarella cheese. But you can definitely make this completely vegan or not.
I also love a great way to add in hidden veggies and right as I rolled up these lasagnas, I added a few pieces of spinach. They were a hit. The boys loved it and I know your family will as well.
Here’s What You Need
- Gluten-free lasagna noodles
- Pasta sauce of choice, I like the Whole Foods Organic Italian Herb
- Spinach
- Vegan ricotta can sub for regular
- Organic shredded mozzarella
- Turkey pepperoni slices, I like Applegate
- Basil
- Parsley

Pepperoni Pizza Lasagna Roll-Ups
Pepperoni Pizza Lasagna Roll-Ups
Ingredients
- 1 box gluten-free lasagna noodles I like jovial
- 1 jar of pasta sauce of choice I like the Whole Foods Organic Italian Herb
- 1 cup fresh spinach
- 1/2 cup vegan ricotta can sub for regular
- 1½ cups organic shredded mozzarella
- 1 package of turkey pepperoni slices I like Applegate
- Basil for garnish
- Parsley for garnish
Instructions
- Preheat oven to 375°
- Bring a large pot of water to a boil. Cook the lasagna noodles according to the package. Once cooked, remove them and place the noodles on a plate.
- In a 9X11 baking dish, pour a good amount of pasta sauce to cover the bottom layer. Maybe about a 1/2 cup.
- On a flat surface, lay out the lasagna noodles.
- Add a small layer of ricotta, then a little shredded cheese, a few spinach leaves, and pepperoni. Roll them up one by one and place them into the baking dish.
- Pour the remaining pasta sauce on top.
- Then add a little more shredded cheese and pepperoni slices.
- Bake covered for 20 minutes.
- Uncover and bake for another 12 minutes.
- Remove from the oven and top with fresh herbs and serve!
