I used to make these energy bites all the time. My husband is obsessed with them. I went to Juice Bar all the time and they used to sell these energy balls but the price for 3 little balls were almost $7. I couldn’t justify spending that kind of money on these little bite size treats. So what do I do…I make my own. Let me tell you, these are so good. The best part is, you don’t have to bake them. So if you’re not a baker, then this one is for you.
I sometime like to mix things up a bit by changing out almond butter for sun butter or peanut butter or I’ll add in dried fruit or other nuts to the mix. The kitchen is your creation, so go nuts!

This recipe makes about 24 balls but you can cut in half if you only want 12. We go through them so I always double the recipe LOL.
Oatmeal and Almond Butter Energy Bites
Ingredients
- 2 cups organic gluten free rolled oats
- 1/2 cup cacao nibs
- 1/2 cup pumpkin seeds
- 2 1/4 cups almond butter peanut butter, sun butter or any nut butter of choice
- 4 tbsp coconut oil liquid or melted
- 2 tbsp honey
- 2 1/2 tbsp chia seeds
- 1 tbsp chocolate collagen peptides optional
- 1/4 cup dried cranberries optional
Instructions
- In a large bowl, add the almond butter, coconut oil, honey, cacao nibs, chia seeds, collagen, cranberries and mix.
- In the food processor, add the rolled oats and pumpkin seeds and pulse until coarsely ground (not finelyou wan to see some whole oats still in there.
- Add oat mix to the almond butter mix and mix well with spatula.
- Refrigerate for about 45 min
- Remove from fridge and use a melon scooper for equal measurements and roll them into little balls.
- Add on parchment paper and in a glass container and chill in fridge.
- Enjoy!
