Lemony Hearts of Palm Arugula Salad

This Lemony Hearts of Palm Arugula Salad is absolutely divine. Such a great way to switch up your everyday salads and a perfect side dish for hosting parties.

I don’t know about you but I sure love a good salad. Some people (my hubby included) think salads are boring, but when it’s done right and by adding new flavors and textures, salads are far from boring.

If you haven’t had hearts of palm, I HIGHLY encourage you to run to the grocery store and pick up a can today! It’s so flavorful and one of my absolute favorite ways to spruce up a salad. It’s a family favorite ingredients that’s for sure. It comes from the center of a cabbage palm tree and has this tasty and subtle lemony flavor to it. Because the flavor is so delicate it makes this tasty crunchy vegetable versatile in so many recipes.

I like to build flavor in my salads. You have your base which is your greens. I chose arugula because it has this light peppery flavor to it which pairs nice with a lemon vinaigrette. Then you add some texture to it. Celery is so refreshing and adds a nice crunch and red onion is amazing. If you want a more subtle onion, I’d recommend a shallot.

Next, us any other items you have on had that would be great in a salad. I chose my favorite olives which are Castelvestrano, fresh tomatoes from the garden, and would have LOVED to add avocados for some healthy fats but was not ready quite yet. Top with the refreshing dressing and it’s amazing.

Lemony Hearts of Palm Arugula Salad

A delicious lemon arugula salad packed with a lemon citrus vinegarette and hearts of palm.

Ingredients
  

  • 2 ½ packed cups of arugula
  • 1 can hearts of palm drained, rinsed, and sliced into rounds
  • 2 celery sliced thin
  • 1/4 of red onion thinly sliced
  • 1/4 cup Castelvestrano pitted olives or any green olive, sliced
  • 1/4 cup cherry tomatoes halved
  • fresh mint for garnish
  • 1 small lemon juiced
  • 1/4 cup olive oil
  • 1 tsp dijon mustard
  • salt and pepper to taste

Instructions
 

  • In a small bowl, whisk together the last 4 ingredients and set aside.
  • In a large bowl, add all the salad ingredients. Top with a little dressing, toss to combine and serve.
