The easiest meal to make is these meatballs. I took a famous Chinese takeout and turned them into these epic meatballs that come together in less than 30 minutes. The sauce is so flavorful, the chicken is perfectly cooked, and it’s all made on a sheet pan baby!
You can prep this entire meal a day ahead of time or the morning of and just bake it to make your life easier and less stressful on those busy nights. I know for me and with my boys in sports, I am constantly looking for ways to make dinner time easy peasy, and ready in a flash.
Here’s What You Need
- Ground chicken
- Ground ginger
- Onion powder
- Onions
- Broccoli
- Coconut aminos
- Avocado oil
- Cassava flour
- Chicken broth
- Minced garlic

Paleo Chinese Chicken and Broccoli Meatballs
Paleo Chinese Chicken and Broccoli Meatballs
Ingredients
- 2 lbs ground chicken
- 2 tsp ground ginger
- 1 tbsp ground onion powder
- ½ onion minced
- ½ onions chopped into large pieces
- 3 scallions chopped into large pieces
- 2 heads of broccoli
- 1 tbsp coconut aminos
- 4 tbsp cassava flour or gluten-free flour
- Salt and pepper to taste
- Sauce
- 1 tbsp avocado oil
- ¾ cup chicken broth
- ⅓ cup coconut aminos
- 2 minced garlic cloves
- 1 tsp onion powder
- 1 tsp ground ginger
- Salt and pepper to taste
Instructions
- Preheat oven to 400°
- In a small bowl, add all the sauce ingredients and whisk well. Set aside.
- In a large bowl, add all the meatball ingredients EXCEPT the scallions and chopped onions. Mix together with your hands and form small equal meatballs.
- On a large sheet pan, add the meatballs to one side then the broccoli and chopped onions. Drizzle most of the sauce right on top and bake for about 25 minutes or so.
- Remove and drizzle with any remaining sauce.
- Tope with sesame seeds and scallions and enjoy!
