I have a confession to make….I dislike blue cheese. I know. It’s a classic staple with buffalo chicken. But guess what? I LOOOOVE ranch dressing and the combo with the buffalo sauce is amazing. I have been using THIS tasty vegan ranch dressing for years and it’s absolutely delicious.
I love simple and easy and these buffalo meatballs fit the bill. Plus, I bake them so it requires very little attention to keep this dish less fussy. The combo of the buffalo chicken meatballs and the crunchy ranch salad really brings this dish together.
Here’s What You Need
- organic ground chicken, I like Butcher Box
- red onion
- parsley
- onion powder
- garlic powder
- buffalo sauce, I like Noble Made Mild Sauce
- ranch dressing (recipe HERE)
- cassava flour
- coleslaw
- romaine
- celery
- tomatoes
- avocado

Hormone-Friendly Buffalo Chicken Meatballs Salad
Ingredients
- BUFFALO CHICKEN MEATBALLS
- 1½ lbs ground chicken
- 1/4 red onion diced
- 3 tbsp minced parsley
- 1/4 cup cassava flour or tapioca flour
- 2 tbsp garlic powder
- 1 tbsp onion powder
- 2 tbsp vegan ranch recipe linked in blog post
- 2 tbsp buffalo sauce plus 1/3 cup for drizzle
- salt and pepper to taste
- SALAD
- 1½ heads of romaine lettuce chopped
- 1 bag coleslaw
- 1/4 cup vegan ranch recipe linked in blog post, plus more for serving
- 3 celery stalks sliced
- 1/2 red onion sliced
- 1/2 cup sliced cherry tomatoes
- 1 sliced avocado
Instructions
- Preheat oven to 375°
- In a bowl, add all the meatball ingredients EXCEPT the 1/3 cup of buffalo sauce. Only add 2 tbsp of buffalo sauce. Mix well with your hands and form meatballs. Place them on a parchment paper-lined baking sheet and drizzle the remaining buffalo sauce right on top.
- Bake meatballs for about 20 minutes.
- In a large bowl, add the coleslaw and romaine lettuce. Then add the ranch dressing. Toss well.
- On a platter, add the salad mix, and the meatballs, and top with sliced red onions, avocado, celery, and more ranch.
- Serve and enjoy.
