These beautiful and colorful tacos are such a great weeknight meal. Made with Halloumi cheese which is a great sturdy and salty cheese that’s perfect for grilling. It’s served on a bed of guacamole in a butter lettuce cup. Top it with pickled red onions, black beans, and shredded veggies for a tasty and satisfying dish.
Don’t let these beauties fool you into thinking you’ll be hungry. It’s a very hearty dish due to the healthy fats from the avocados, the protein from the beans and halloumi cheese, and the extra veggies nestled right inside. The whole family devoured these and my son told me it was a “great taco Tuesday dish mom.”
Ingredients
- halloumi cheese
- butter lettuce
- limes

Halloumi Lettuce Tacos
Ingredients
- 2 package of Halloumi cheese sliced
- 2 radishes juliened
- ½ can black or pinto beans drained and rinsed
- 2 avocados
- ½ lime juiced
- 2 carrots grated
- salt and pepper to taste
- 2 containers of butter lettuce-about 16-18 leaves
- pickled red onions optional
- cilantro for garnish
- 1½ tbsp olive oil
- ¼ cup choped macadamia nuts optional
Instructions
- In a medium bowl, add the avocado, lime juice, salt and pepper and mash. Set aside.
- Heat a non-stick skillet on medium-hight heat with olive oil and sear the sliced cheese for about 4-5 min per side.
- To assemble, take your butter lettuce, scoop some of the avocado, add a little of the beans, top with the halloumi cheese, grated carrots, radishes, and pickled red onion. Top with cilantro and macadamia nuts and enjoy.
