Eggs benedict are my favorite breakfast savory item on any menu. But every time I eat it, I feel bloated and weighed down after. Plus, my hubby has celiac and I try to eat gluten-free all the time and really wanted to create something that we both can enjoy and not feel over-stuffed. So enter my Guilt-Free Eggs Benedict. I really wanted to make this whole 30 approved but there was one minor ingredient in the cauliflower patties…corn flour. But heck, that’s ok because these turned out amazing! Who knew there were even cauliflower patties these days. I just so happened to walk down the frozen aisle at the grocery store to buy frozen shredded hashbrown to make the patty from scratch. But low and behold, these beauties sitting right next to the hashbrowns. Of course, I snagged it and had to try it. Now, I’m completely obsessed and use these all the time when I make benedicts.

I recipe tested and used myself and my hubby as the guinea pig and we both looked at each other after we inhaled it and said “wow”! So tasty, gluten-free, dairy-free, and made with clean healthy ingredients. He had no idea the “muffin” was cauliflower. If you’re drooling over this recipe like I am writing about it, make it asap. So easy to do and feels amazing eating them without feeling weighed down afterward.

Guilt-Free Eggs Benedict

Enjoy an eggs benedict that is guilt-free, gluten-free, and super delicious.

  • High Powered Blender

Ingredients
  

  • Benedict Ingredients
  • 4 cauliflower patties
  • 2 slices of whole 30 turkey bacon
  • 1 cup of spinach
  • 4 eggs
  • 1/2 avocado sliced
  • salt and pepper to taste
  • 1 tsp lemon juice
  • dash of paprika
  • Hollandaise Sauce
  • 3 egg yolks
  • 7 tbsp ghee melted
  • 1 tbsp lemon juice
  • dash of whole 30 compliant hot sauce I like Siete
  • dash of turmeric and salt optional

Instructions
 

  • Hollandaise Sauce
  • In a blender, add the egg yolk, lemon juice, hot sauce, and turmeric
  • Turn blender on medium and drizzle in the melted ghee
  • Blend for almost 3 minutes until it thickens up.
  • Benedict
  • Heat a cast-iron skillet on medium and spray with a non-stick oil
  • Cook the cauliflower patties for about 5 minutes per side or until cooked through. Remove and set aside.
  • In the same skillet, cook the turkey bacon and remove and set aside.
  • sautee the spinach in a little bit of avocado oil, salt, and pepper. Maybe 2 min and remove and squeeze a bit of lemon.
  • Next, boil a huge pot of water. Add a dash of apple cider vinegar or white.
  • With a slotted spoon, start creating a whirlpool by stirring the pot of water with the spoon.
  • Crack an egg into the whirlpool (make sure you do this one by one). Cook egg for about 3 minutes and remove and place on paper towel to soak excess water
  • Do the same thing for each egg.
  • To Assemble: start with cauliflower patty, add the spinach, the turkey bacon, poached egg, and avocado. Drizzle the hollandaise sauce on top and finish with a little paprika.
