It’s officially grilling season and I am sooo excited because it’s the one season where my husband actually cooks lol… well, I prep it all for him to stick on the grill lol. These skewers are so quick and easy to whip up and require just a few ingredients.
Don’t have skewers, no problem. If you have a grill pan, simply season up your veggies and throw them on until they’re nice and seared. Sometimes, when I cook for just my family at home not grilling outside, I prefer it this way because it’s easier and faster. LOL
Ingredients
- Brussel sprouts
- Baby potatoes
- Mushrooms
- Red Onions
- Zucchini
- Olive oil
- Salt and pepper
I then, serve this up with a delicious tangy and zesty mustard sauce. So easy to make too. Just throw it all in a bowl, whisk it up, and drizzle over the cooked veggies.
Mustard Sauce Ingredients
- Grain mustard
- GarlicOlive oil
- Salt
- Apple cider vinegar or white wine vinegar
This makes a great main dish served with your favorite grains and maybe a delicious summer salad. You could also make this for a simple and tasty side dish. Whichever you choose, you won’t be disappointed.

Grilled Veggie Skewers With Mustard Sauce

Ingredients
- VEGGIE SKEWERS
- 8 oz box of mushrooms cleaned
- 1 lb baby potatoes
- 1 lb brussel sprots halved
- 1 zucchini sliced
- red onion sliced thick
- 1-2 tbsp olive oil
- salt and pepper to taste
- MUSTARD SAUCE
- 1/3 cup whole grain mustard
- 1/4 cup apple cider vinegar
- 1/4 cup olive oil
- 2 cloves garlic grated
- pinch of salt
Instructions
- Boil a pot of water in a medium saucepan. Meanwhile, heat a grill pan.
- Parboil the baby potatoes for 10 minutes. about 8-9 minutes into boiling the potatoes, add in the brussel sprouts and boil for another 2 min. Drain and cool for 5 minutes.
- Thread the potatoes, brussel sprouts, mushrooms, onions, and zucchini.
- Drizzle the veggies with a little olive oil, salt, and pepper.
- Grill for 5 minutes per side.
- Meanwhile, in a small bowl, whisk together the mustard sauce ingredients.
- Drizzle the veggies withbthe mustard sauce and enjoy.
