She always had her flare to her recipes and quite frankly, sometimes would make things up as she went along. These koftas are the real deal that my grandmother would grill out after a day worth of swimming and my aunt’s house.

Grilled Beef Kofta Kebabs
Equipment
- kebab sticks
Ingredients
- 1 lb ground grassfed beef
- 1/2 lb ground grassfed lamb
- 1 bunch parsely minced
- 3 garlic cloves minced
- 1 yellow onion grated
- 1 tsp sumac
- 1 tsp allspice
- 1/2 tsp cardamom
- 1/2 tsp paprika
- salt and pepper to taste
- CUCUMBER SALAD
- 1 cucumber diced,
- 1 cup cherry tomatoes quartered
- 1/3 cup diced red onions
- 1/2 bunch curly parsley minced
- 1 lemon juiced
- 3 tbsp olive oil
- 1/2 tsp sumac
- salt and pepper to taste
- GARLIC SPREAD
- ½ cup vegan mayo
- 5 large garlic cloves rough chopped
- ½ lemon juiced
- pinch of salt
- OPTIONAL TOPPINGS
- tahini
- parsley
- hummus
Instructions
- In a mini food processor, add in all the garlic sauce ingredients and blend. Pour in a bowl and set aside in the fridge.
- In a large bowl, add all the kofta kebab ingredeints and mix well with your hands until fully combined.
- Take a fistful portion of the meat mixture and mold it on a skewer and repeat the process. Make sure each kofta kebab is about 1 inch in thickness.
- Place the kofta kebabs on the lightly oiled, heated gas grill. Grill on medium-high heat for 4 minutes on one side, turn over and grill for another 3-4 minutes.
- Serve with all your favorite toppings and maybe on a bed a basmati rice.
