My sweet Armenian grandma was the true chef in our lives. There was nothing that could even compare to her Armenian cooking. Her meals were made with so much love and her happiness came from being around family and people who eat lol… Seriously, nothing brought her more joy than seeing people eat her food. My grandma’s Armenian chicken salad recipe was a family favorite and I’m excited to give you the secret to her amazing recipe.
My grandparents were very much involved in our lives growing up. We would see them a few times a week and every single time they would come to visit, they would bring so much fresh cooked Armenian food like dolma, boreg, and of course…the famous chicken salad.
When I tell you my grandma’s chicken salad is next level, I mean it! She takes this up a notch by adding ingredients you wouldn’t expect. It’s my all time favorite chicken salad and I know it will soon become yours. My favorite way to eat this deliciousness is as a sandwich.
If you need to make any substitutions you can use vegan mayo, greek yogurt, or dairy-free yogurt in place of the regular mayo. You can even make my personal favorite homemade mayo by The Defined Dish here. I used regular vegan may by Chosen Foods and it was amazing.

Grandma’s Armenian Chicken Salad
Grandma’s Armenian Chicken Salad
Ingredients
- 1 cooked rotisserie chicken shredded
- 3 tablespoons of Mayo or any mayo of choice
- 2 russet potatoes peeled and chopped
- 1 yellow onion grated
- 1 tbsp avocado oil
- 1/2 lemon juiced
- 1/2 bag of frozen peas and carrots thawed
- salt and pepper to taste
Instructions
- Boil a medium-size pot with filtered water and add a dash of salt.
- Once boiling, add the potatoes and cook until soft (about 15 minutes)
- While potatoes are cooking, grate the onion into a large bowl and add the shredded chicken.
- Once potatoes are soft, drain them and mash them in the pot and add them into the bowl with the onions and chicken.
- Add the mayo, oil, lemon juice, salt, pepper, and thawed peas and carrots.
- Feel free to adjust mayo and seasonings as needed but the more pepper the better. My grandma loved pepper and it tastes amazing with lots of it in the salad.
