I am a busy mama always rushing from one sport to the next. This chicken was loved by my family and honestly, super quick to make. I used chicken cutlets which was great because it cut cooking down on cooking time. Then instead of bread crumbs, I used cassava flour which makes it lighter and grain-free.
Serve this delicious meal with a simple arugula salad. Hope you enjoy this as we all did.

- Cassava flour
- Onion powder
- Garlic powder
- Olive oil
- Arugula

Gluten-Free Chicken Paillard
Ingredients
- CHICKEN PAILLARD
- 5 chicken cutlets
- 1 cup cassava flour
- 1 tbsp onion powder
- 1 tbsp garlic powder
- Salt and pepper to taste
- Olive oil for cooking
- ARUGULA SALAD
- 3 cups arugula
- 2 tbsp olive oil
- 1/2 lemon juices
- Salt and pepper to taste
- Shaved Parmesan optional
Instructions
- In a large bowl, add the olive oil, lemon juice, salt and pepper. Whisk well and then add in the remaining salad ingredients. Set aside.
- In a large cast iron skillet set to medium heat, add at least 1 tbsp olive oil for starting. In a bowl, add the cassava flour, onion powder, garlic powder and mix.
- Season the chicken with salt and pepper. Dip the chicken one by one in the cassava flour and shake off excess flour. Working in batches, add the chicken and cook for about 4 minutes per side.
- Remove and serve it on a plate and top it with arugula salad. Serve and enjoy!

Can I substitute the cassava flour for almond flour or another low(er) carbohydrate flour to make this recipe suitable for diabetics? If so which flour would be the best?

I recommend substituting to coconut flour instead of almond flour. Cassava may be to grainy in the energy bites because it’s not cooked.
