I made this for lunch the first week of Fall, and as soon as I posted this on Instagram, I had so many people message me about this recipe. So after many requests, here it is up on the blog. This salad is by far one of my favorites I created. The only thing I need to come up with is an apple cider vinegar dressing to go alongside. But it’s quick, healthy, and easy. You can prep it all in advanced and add dressing when you’re ready to eat it. Just be sure to add lemon juice on your diced apples to keep it from browning. If you’re trying to keep it vegan, just omit the turkey. But this salad is so satisfying that I hope you enjoy it as much as I do.

Apple and Pomegranate Fall Salad
Ingredients
- 3/4 cup spinach
- 1/2 cup arugula
- 1/3 cup sliced celery
- 2 thinly sliced radishes
- 1/3 cup diced organic gala apple
- 2 tbsp pomegranate seeds
- 1/4 cup pepitas or pumpkin seeds
- 2 applegate smoked turkey fresh from deli
- 1/2 diced avocado
- Primal Kitchen lemon turmeric dressing
Instructions
- On a large plate or bowl, add all ingredients and top with dressing. This would be a great place for you to add or omit anything that sounds tasty.
