This is such a great meal that screams comfort food without the bloating or overstuffed feeling. It’s incredibly easy to make, packed with so much flavor, and slurp-worthy!
Zoodles are such a great way to incorporate veggies into a meal but it also makes this dish low carb. You can simply buy pre-spiral used zucchini noodles or if you have a spiralizer, buy zucchini and make the noodles yourself. It’s cheaper that way too.
Swaps
You can swap zucchini noodles for regular gluten-free noodles or ramen if you prefer. You can also swap coconut aminos and use tamari or soy sauce.

- Zucchini or zucchini noodles
- Ground beef
- Coconut aminos
- Onion
- Lime
- Basil
- Mint
- Cilantro
- Scallions
- Garlic
- Ginger

Easy Asian Beef Zoodles
Ingredients
- 3 zucchinis spiraled or Zoodles
- 1 lb ground beef
- 1/2 yellow onion, diced
- 4 tbsp coconut aminos
- 2 tbsp rice vinegar
- 1 tbsp gluten-free Gochjang Chili Paste
- 1/2 lime juiced
- 2 tbsp avocado oil
- 2 garlic cloves minced
- 2 scallions chopped into large pieces
- 3 tbsp chopped cilantro
- 3 tbsp chopped basil
- 3 tbsp chopped mint
- Sesame seeds for topping
Instructions
- In a large skillet, add the avocado oil and onions and sautee for 4 minutes.
- Next, add the ground beef and cook making sure to break up the meat. Add in the garlic and cook together.
- Once the meat is cooked, add the gochujang chili paste, ginger, salt, and pepper taste.
- Add in the Zoodles, coconut aminos, rice vinegar, lime juice, cilantro, basil, and mint. Cover and cook until the Zoodles are soft (about 7 minutes).
- Top with sesame seeds and enjoy!
