Serve it on a spreadable hummus that you can easily make yourself or buy any store-bought version you enjoy. Top it with fresh herbs, pomegranate seeds (untraditional but so good), and lemon zest. Drizzle of some tahini or garlic sauce and devour.

Deconstructed Beef Kofta with Hummus
Ingredients
- DECONSTRUCTED BEEF KOFTA
- 1/2 lb grouond beef
- 1/2 lb ground grassfed lamb
- 1 tbsp olive oil
- 3 garlic cloves minced
- 1 red onion sliced
- 1 tsp sumac
- 1 tsp allspice
- 1/2 tsp cardamom
- 1/2 tsp paprika
- 1/3 cup bunch parsely minced
- 1/4 cup fresh mint rough chopped
- 1/4 cup pomegranate seeds
- 1 tbsp lemon zest
- Tahini for drizzle
- hummus for serving
- salt and pepper to taste
- CUCUMBER SALAD
- 1 cucumber diced
- 1 cup cherry tomatoes quartered
- 1/3 cup diced red onions
- 1/2 bunch curly parsley minced
- 1 lemon juiced
- 3 tbsp olive oil
- 1/2 tsp sumac
- salt and pepper to taste
Instructions
- To make thecucumber salad, mix all the ingredients in a bowl and set aside.
- To make the Kofta, add olive oil, garlic, and onions. Sautee for about 5 minutes.
- Next add in the beef and lamb and ground it up. Once it’s almost cooked through, add in all the seasonings.
- Once it’s finished cooking, top with fresh parsely, mint, pomegranate seeds, and a little lemon zest.
- Serve spreading hummus onto the plate. Then top with the meat any extra granishes, tahini, and anything else you desire.
