I absolutely love cucumbers. It’s a vegetable that you can do so much with. Throw them in smoothies, salads, water, pickled cucumbers, and use to roll sushi with. My son and I have been on a HUGE sushi kick lately…well, always lol, and I wanted to make my own but a vegan and more refreshing version.
Since I recently made a Zucchini Enchilada Con Carne, I was on a roll ( no punt intended lol) with other things I can roll and eat. Enter this healthy cucumber sushi. Cucumber and Avocado Benefits

Cucumber Avocado Sushi Roll
Cucumber Avocado Sushi Rolls
Ingredients
- 1 English cucumber
- 1 avocado mashed
- 1/2 lemon juiced
- 1/4 cup fresh mint and basil rough chopped
- 2 tbsp hemp seeds
- salt and pepper to taste
Instructions
- Using a vegetable peeler, thinly slice the cucumbers into thin strips.
- In a bowl, mash the avocado with a fork and add the salt, pepper, and lemon juice.
- Lay one strip of cucumber down and thinly spread some of the avocados from one end to the other.
- Top with hemp seeds and fresh herbs and roll.
- Continue to do the rest and enjoy.
