I love tacos and these are a new favorite. They’re perfectly seasoned on the outside, stuffed with spiced turkey meat and cheese, and baked to perfection. Top it with queso, guac, pickled onions, and cilantro, and enjoy.

Crunchy Baked Turkey Tacos
Crunchy Baked Turkey Tacos
Ingredients
- BAKED TACOS
- 2 lb ground turkey
- 1 yellow onion diced
- 2 cloves of garlic minced
- 1 cup shredded cheese Mexican Blend, Mozzarella, or any cheese of choice
- 1 4 oz can sliced black olives drained and rinsed
- 4 oz diced mild green chiles
- 1-2 packets of Siete taco seasoning reserve a little to season the tortillas
- 1/3 cup chicken broth
- 10 Siete cassava tortillas
- 1/2 cup of dairy-free queso I like Siete
- PICKLED RED ONIONS
- 1 red onion thinly sliced
- 1½ cups apple cider vinegar
- 1/2 cup hot water
- 1 tsp peppercorns
- SIMPLE GUAC
- 4 ripe avocados
- 1 lime, juiced
- 1 grated garlic
- 1/3 cup cilantro minced
- salt and pepper to taste
- TOPPINGS
- pickled red onions or store-bought
- guac
- queso
- cilantro
- lime
Instructions
- *The night before or the morning of, make the pickled red onions by adding all the ingredients into a bowl or mason jar making sure the onions are covered with the liquid. Refrigerate and set aside. You can always make this the day of or buy pickled onions.
- Preheat oven to 425°
- In a large skillet, make the tacos by adding 2 tbsp of avocado oil. Add the onions and garlic, and saute for about 5 minutes. Add the ground turkey and cook breaking apart the meat. Once almost cooked through, add the taco seasoning packets. Cook until the meat is cooked through.
- Next, add the olives, green chiles, and chicken broth. Mix well and turn off the heat.
- Next, heat the tortillas on the stove directly on the burner for about 10 seconds per side.
- Lay them on a baking sheet and brush a little avocado oil on one side and then add a little of the taco seasoning. Lay the tortilla’s seasoned side down on the baking sheet.
- Next, add about 1 tbsp of shredded cheese and about 1/2 tbsp of queso on one side of the tortilla. Then add the meat mixture. Fold in half.
- Bake the tacos in the oven for about 20 minutes.
- Meanwhile, make the guac by mixing together all the ingredients in a bowl.
- Once the tacos are done baking, serve them with the guac, more queso, pickled red onions, and cilantro.
