En papillote is a great way to whip up a quick, healthy, easy dinner without very little to clean up after. It’s my personal go-to when I know I’m going to have a busy evening. You can use any white fish or even salmon if that sounds best. Just be sure to always use wild-caught.
Ingredients
- wild-caught sea bass
- fennel
- onion
- green beans
- Yukon potatoes
- lemon
- orange
- dill
- butter or ghee
- salt and pepper
- olive oil

Citrus Fennel Sea Bass En Papillote
Ingredients
- 4 sea bass fillet
- 1 yellow onion sliced
- 2 fennel bulbs sliced
- 3 cups green beans
- 2 yukon potatoes sliced very thin
- 2 tbsp olive oil
- 4 tbsp fresh chopped dill
- 3 tbsp fresh juice from an orange plus slices for topping
- 1/2 lemon juiced, plus slices for topping
- salt and pepper
- 4 tbsp butter split into 4
Instructions
- Preheat oven to 400
- Divide 4 pieces of parchment paper (about the size of a piece of paper).
- In a bowl, add all ingredients EXCEPT the sea bass, lemon/orange slices, and butter. Mix well.
- Add the veggies on the center of the parchment paper. Top with the sea bass. Sprinkle more salt and pepper on the fish.
- Add the slices of lemon and oranges.
- Top with butter and more dill.
- Seal up the parchment paper and place them on a baking sheet.
- Bake for 20 minutes.
