This Cinnamon Vanilla Chia Seed Pudding is the perfect healthy breakfast! Packed with fiber, protein, and antioxidants, this will keep well fueled.
I absolutely love a good chia seed pudding. I’m fact, I make this weekly for the family and I to enjoy because it’s absolutely delicious. Not only does it taste amazing, but these tiny little seeds are high in omega-3 fatty acids and loaded with protein, fiber, and antioxidants. Wow right?!
How I make mine is slightly different and can be eaten almost instantly without waiting for it to thicken up like a gel-like consistency. I actually pour all my ingredients into a blender and blend it all up. Now, why do I do this? 1) it thickens up instantly and doesn’t need to settle for a few hours before devouring making it a perfect last minute heathy breakfast. 2) my boys don’t like the texture of the chia seeds when you just mix in a bowl and refrigerate it until it thickens. Blend it up and tastes like vanilla pudding 🙂
Ingredients and Substitutes
- Chia Seeds: they come in white or black and either one works perfectly in here.
- Almond milk: I used almond milk in here but any milk you prefer would taste great. I love to also make and use pumpkin seed milk for a nut-free option.
- Vanilla: you can use vanilla extract or even vanilla paste.
- Cinnamon: one of my favorite spices with so many health benefits.
- Maple Syrup: I add a touch of maple syrup to sweeten it up. You can also use honey.

That’s it! Just a few ingredients to create something so healthy and satisfying. Play around with flavors and make it your own by adding cacao powder for a chocolate flavor, pumpkin spice, and pumpkin puree for some Fall flavors. It’s truly the perfect vegan egg-free breakfast. Heck, it’s also a great snack or dessert.

Ingredients
- 2½ cups almond milk or any milk of choice
- 1/3 cup chia seeds
- 1.5 tsp vanilla extract
- 1 tsp ground cinnamon
- 1 scoop vanilla protein powder
- 1 tbsp honey or maple syrup (optional)
Instructions
- In a blender, add all ingredients and blend for about 25 seconds until smooth and creamy.
- Pour in little glass bowls and top with any nuts, granola, or fruit you prefer.
- This will serve 2-4 people.
