Soup season is the best season and today on the blog, I’m sharing a family favorite recipe. This soup couldn’t be any easier to make and quick to make when you’re short on time. It’s also loaded with blood sugar-balancing ingredients. You have chicken for protein, avocados for healthy fats, and zucchini for some fiber and greens. Plus, you have lots of tasty cilantro which is great for detoxifying the body.

Cilantro Lime Chicken Soup
Ingredients
- 1 yellow onion diced
- 2 garlic cloves minced
- 1 tbsp olive oil
- 2 zucchini’s sliced lengthwise then sliced again
- 1 4 oz can diced mild green chilies
- 1 14 oz can diced tomatoes
- 8 cups chicken broth
- 4 cups shredded chicken
- 1 tbsp chilli powder
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp dried oregano
- 1 cup minced cilantro
- 1 1/2 limes juiced
- salt and pepper to taste
- 2 avocados diced
Instructions
- In a large pot, add the olive oil. Saute onions, garlic, and a dash on salt, and pepper for about 5 minutes.
- Add in the chicken broth, green chiles, diced tomatoes, zucchini, chicken, cumin, chili powder, oregano, paprika, salt and pepper. Cover and cook for about 20 minutes or until the zucchini is soft.
- Add in the lime huice, and cilantro.
- Adjust seasoning and serve.
- Top with fresh diced avocados and more cilantro.
