If there is a salad to make for lunch or as a side dish, it would be this one right here. My 6 year old and 4 year old go to town when I make this which means I’m doing something right lol.
Made with raw shaved Brussel sprouts and raw undated walnuts, this salad packs a punch for nutrients.

Caraway Brussel Sprout Salad
Ingredients
- 2 cups shredded brussel sprouts
- 1/3 cup raw walnuts rough chopped
- 2-3 tbsp olive oil
- 2 tbsp lemon juice or about 1/2 lemon to your taste
- 2 tbsp chopped fresh mint
- 1.5 tbsp caraway seeds
- salt and pepper to taste
Instructions
- In a medium bowl, add all the salad ingredients and mix well. Refrigerate until you’re ready to devour. The longer it sits, the better the flavor.
