I love finding new ways to enjoy salmon. My kiddos and I can devour salmon especially when it’s nice and crispy on the outside. This salmon is seasoned with a delicious taco seasoning and topped with some summer corn and avocado salad, then dressed in a cilantro lime dressing. YUM right?!
Here’s What You Need
- wild-caught salmon
- Siete taco seasoning
- Olive oil
- Corn
- Avocado
- Cucumber
- Red onions
- Cilantro
- Lime
- Garlic
- Scallions
- Basil
- Cotija cheese

Broiled Salmon With Corn Avocado Salad
Ingredients
- SALMON
- 1 1/2 lbs wild-caught salmon
- 2 tbsp olive oil
- 1/2 packet of taco seasoning. I like Siete
- CORN AVOCADO SALAD
- 3 ears of corn
- 2 avocados diced
- 1 Persian cucumber diced
- 1/2 red onion sliced
- 1 cup cherry tomatoes halved
- 1/4 cup sliced fresh basil
- 1/3 cup cotija cheese
- CILIANTRO LIME DRESSING
- 1 cup cilantro
- 1 scallion or green onion rough chopped
- 1 lime zested and juiced
- 1/4 of an avocado
- 1/2 cup olive oil
- 2 garlic cloves
- salt and pepper
Instructions
- Preheat Broiler.
- DRESSING: Add all the dressing ingredients into a mini food processor and blend to combine, set aside.
- Boil water in a large pot and add the corn on the cob for about 10 minutes. Remove and cut the corn kernals off.
- CORN AVOCADO SALAD: Add all the ingredients into a large bowl and add half of the dressing. Mix and set aside.
- SALMON: Place salmon on a foil lined baking sheet, season with taco seasoning, olive oil, and broil 8-10 minutes or until golden.
- Place the salmon on a plate or platter and top with the corn avocado salad.
- Enjoy!
