If you’re new to my blog, then I should probably mention that I am a veggie freak. I love adding vegges to anything I possibly can. Vegetables are so good for you and luckily, my boys like eating them. But you can never have too much. The nourish the body, provide extra fiber and nutrients, and it’s fulfilling to me when I can add them in something my boys enjoy.
Let’s be real, I sometimes don’t make my own applesauce. I try so hard to make everything from scratch so that I know what exactly my boys are putting into their bodies, but sometime I take shortcuts and applesauce is often one of those shortcuts. I have no idea why I don’t make my own applesauce all the time because it’s sooo easy to make and takes very little time.
I made my own baby food with both boys and every time I made them applesauce or some sort of fruit puree, I had to include some sort of veggie. I am literally obsessed….maybe I have a problem LOL.
The beets in this gives it a beautiful pink color and the carrots are great to include because its packed with nutrients and add sweetness. Hope you give this a try and tag me in any photos. Love seeing al of your creations.
Beet, Carrot, Applesauce
Ingredients
- 5 loose carrots peeled and chopped
- 1 red beet peeled and chopped
- 3 gala apples or honeycrisp chopped (I leave the skin on for extra nutrients)
- 1 pear chopped
- 1 tsp ground cinnamon
- 1 cup filtered water
- juice of 1/2 lemon
Instructions
- Add all chopped ingredients to a large pot
- add water, lemon, and cinnamon
- Place lid on pot and cook for about 20 min. Keep an eye to ensure there is still water in pot and add more if it dries out to keep from burning.
- Once cooked and soft, add everything in a blender and blend.
- Cool and store in glass container
- Enjoy!
