Ah, avocado toast…Probably one of my favorite things to eat in the morning. I make it at least 2-3 times a week. Making different variations of avocado toast is fun because the possibilities are endless. One of my favorite bloggers Eden Eats posted a snap pea salad on her Instagram and well, I tried it and I loved it. This snap pea salad is inspired by her recipe with a few changes and additions I love.
A breakfast that is loaded with fat (avocado) and fresh greens (snap peas). This is a simple and tasty salad that takes very little time to make, can be prepped ahead of time, and packed with so many citrus and earthy flavors. You’re really in for a treat with this one and perfect for Spring.
Here what you’ll need
- Bread
- Avocados
- Lemon (juice and zest)
- Hemp Seeds
- Mint
- Basil
- Chives
- Parsley
- Radishes
- Snap Peas

Avocado Toast with Herby Snap Peas
Ingredients
- 4 slices of bread of choice toasted
- 2 avocados mashed
- 3 cups snap peas sliced lengthwise
- 3 radishes sliced thin
- 1/4 cup basil rough chopped
- 1/4 cup mint rough chopped
- 1 tbsp chives chopped
- 2 tbsp parsley chopped
- 1/2 lemon juiced
- 1/2 lemon zested
- 1 tbsp olive oil
- salt and pepper to taste
- 1 tbsp hemp seeds
Instructions
- In a large bowl, add the sliced snap peas, radishes, basil, mint, chives, parsley, lemon zest, lemon juice, olive oil, salt, and pepper. Mix it well.
- In a bowl, mash the avocado and add a little salt and pepper.
- Top the avocado toast with the snap peas. Add some hemp seeds right on top and serve.
- Enjoy
